"For the People" Part I
Preview of food prepared for the "For the People" event. All of the dishes were prepared with food found on the Menominee Reservation as a way of encouraging Native Americans to return to using the land for its food needs, something that was discouraged when tribes were forced to assimilate in the 1800s and 1900s. Among the dishes prepared were venison chili with tempary beans, hominy stew with squash and leeks, maple glazed trout, arepra cakes with wojape sauce, bison meatballs with wild rice and cranberries, bison liver and heart skewers, and cornmeal-seared whitefish, among other items.
